Chickpeas (aka garbanzo beans) add quick,
nutty-tasting protein to a variety of dishes.

For a snack, toss a well-drained 15-oz. can of
chickpeas with a tablespoon of canola oil
and spread in a single layer on a baking
sheet. Sprinkle with salt and a hefty pinch of black pepper.
Roast 25 m inutes at 4 0 0 °F o r until crisp, shaking pan to
toss peas halfway through. Cool and enjoy.

Mash chickpeas with a fork. Stir in a few drops of olive oil
and th e juice from one small lemon. Slather on cucum ber
slices and top with tom atoes and chopped basil o r dill.
